Nom Alert: Pulled Pork Sriracha Guacamole Grilled Cheese Sandwich
Rated PG-13. This is a grilled cheese you won't find on any kid's menu.
4 thick slices old cheddar
2 slices of bread, Italian cut (thick)
2 large avocado
1 roma tomato, diced
1 small onion, diced
1 – 2 tbsp Huy Fong Sriracha sauce
1 tbsp lime juice
1 tsp cumin
1/4 cup fresh cilantro, chopped (optional)
Pit the avocados and scoop the meat into a mixing bowl, then mash thoroughly with a fork.
Add tomatoes, onions, lime juice, cumin, sriracha, cilantro (if using), salt and pepper. Mix it all together.
Seal the bowl with plastic wrap and refrigerate for 30 minutes
Preheat a pan on high heat.
Butter one side of each piece of bread. Lay bread in pan, butter side down, place 2 slices of cheese on top of each bread slice. Cover the pan with a lid to help the cheese melt faster. Grill til it’s toasted how you like.
