Nom Alert: Chicken Sriracha Scramble

We all know breakfast is the most important meal of the day, and we all also know Sriracha is the most important addition to every meal. So, it only makes sense to start your day with this low-carb, paleo friendly omelette.

Ingredients:
  • One chicken breast (skinless, boneless)
  • 3 egg whites
  • 1 teaspoon of low-fat cream
  • 1 green onion
  • Low fat bacon cubes (or replace with diced ham, turkey, pancetta, etc)
  • Cup of roma tomatoes
  • Handful of low fat shredded cheese
  • Huy Fong Sriracha
  • Black Pepper
  • Salt
  • Chives
Steps
  1. Sauté the green onion with the bacon.
  2. Cut the chicken, load up with Sriracha (to taste), and add to pan.
  3. Cook until close to being browned. Add salt and pepper to taste.
  4. Mix egg whites with cream and add to the chicken.
  5. Scramble on low heat, removing pan from heat every 30 seconds for 30 seconds while continuing to mix together.
  6. Add cheese and wait till it melts.
  7. Remove scramble from pan and place on plate.
  8. Cut roma tomatoes in half, cook on same pan for 2 minutes.
  9. Add tomatoes to side of scramble, top scramble with chives and more Sriracha
  10. Ready to serve!
